Development of Egg
Products Industry
A dried egg industry began
to develop in about 1878, but
with the Panama Canal
opening, imports from China
hindered its growth. The
frozen egg industry started
after 1890 and grew
throughout this century. In
the last 20 years liquid egg

5 packages of unflavored
gelatine
2 cups cold water
stir together and let stand
2-6 ounce boxes of flavored
gelatine
2% cups cold water
V* cups sugar
Combine and bring to a
boil. Add to first mixture stir
in 1 cup cold water. Pour into
pan and refrigerate. Cut in
blocks.

Oatmeal Drop Cookies
Mix together thoroughly:
% cup Shortening
1V« cups sugar
2 eggs
6 tablespoons molasses
.Sift together and stir in
1% cups sifted flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
Stir in:
2 cups rolled oats
% cup cut up nuts
1 cup raisins chopped
Drop rounded teaspoon
fuls about 2 inches apart on
lightly greased baking sheet.
Bake until lightly browned.
Bake at 400 degrees about 8-
10 minutes. Makes 5 dozen
cookies.

Pecan Pie
1 cup molasses
y* cup granulated sugar
1 tablespoon flour
stir together and add:
3 beaten eggs
V* cup water
about V* cup pecans
Bake at 350 degrees for 35
minutes or until done. Makes
one pie.

Baked Carrots
2% cups cooked mashed
carrots
1 tablespoon fine onions
3 tablespoons butter
3 eggs beaten
1 cup bread crumbs
2 cups rich milk
% teaspoon salt
Shake in pepper to taste.
Mix all ingredients together
in a mixing bowl then pour
into a baking dish and bake
at 400 degrees for 1 hour.

1 cup granulated sugar
1 cup brown sugar
1 cup vegetable shortening
2 eggs
2 % cups sifted flour
teaspoon baking powder
1 teaspoon soda
2 cups quick cooking oatmeal
1 package chocolate chips
1 cup cocoanut
1 teaspoon Vanilla

1 stack of crackeers
% pound of processed cheese
(sliced)
2 tablespoons chopped onion
2 % cups milk
4 eggs beaten
% teaspoon dry mustard
dash of pepper
Place half of crackers in a
12 x 8 baking dish. Cover
with cheese slices and onion.
Top with remaining
crackers. Combine milk,
eggs, and seasonings. Pour
over crackers, let stand 1
hour and bake in a slow oven
325 degrees for 40 minutes.

Cream together:
2 cups brown sugar
1 cup butter
beat well and add:
1 teaspoon salt
2 eggs, beaten
1 teaspoon vanilla
1 teaspoon cream of tartar
sift together
4 cups flour

Knead like pie dough and
shape into a loaf, slice and
bake.

Two-thirds cup soft shor
tening
Two-thirds cup sugar
3 eggs
2V* cups sifted cake flour
2-3 cup cocoa
V* teaspoon baking powder
IV* teaspoon soda
1 teaspoon salt
1% cup water
1 teaspoon vanilla
Heat oven to 350 degrees.
Grease well and flour two
layer pans 9x1% inch or
oblong pan 13 x 9% x 2 inch.
