livestock Judging Has Paid Off
The Pennsylvania FFA of Mr. and Mrs. Harry A,
Dairy Cattle Judging Team Leininger, RDI, Ephrata
from the Cloister FFA, was 6th high individual, ana
Ephrata High School placed Leonard Martin, son of Mr.
first at the North Atlantic and Mrs. Lester Martin,
Regional Dairy Cattle Stevens RDI, placed eighth.
Judging Contest held Boyd was high individual
recently at the Eastern in Ayrshires while Martin
States Exposition, received the same honor in
Springfield, Mass. Kerry Guernseys, both received
Boyd, right, son of Mr. model cows as prizes. The
Elmer Boyd, RDI, Ephrata Maryland team was second,
was fifth high individual, and Massaschusetts FFA
Harry Leininger, center, son was third. A total of 13 state

Creole Jambalaya
Simmer 1 three-pound cut
chicken in a saucepot with 4 cups
of water until almost tender (35-
40 minutes) Remove chicken
from broth. Reserve both broth
and chicken Mix 14 cup instant
minced onion and 14 teaspoon
instant minced garlic with 14 cup
water; let stand 10 minutes, set
aside Cut 14 pound link pork
sausage into 14-inch pieces
Brown sausage Pour off all but
2 tablespoons fat. Add onion and
garlic Saute 5 minutes Stir in
1 tablespoon flour. Gradually add
214 cups of the chicken broth.
Add 1 can broken up tomatoes,
2 tablespoons parsley flakes, 2
tablespoons sweet pepper flakes,
lli teaspoons salt, 1 small bay
leaf, 14 teaspoon thyme leaves
and 14 teaspoon ground red pep
per Bring to boiling point, stir
m chicken, sausage, 1% cups raw,
regular cooking rice, 14 pound
cooked ham and 14 pound peeled
and devemed raw shrimp. Cover
and simmer until nee and chick
en are tender —about 20 to 30
minutes Serves 8
