Phyllis is president of the Donegal Presbyterian Church Women’s Association which meets at least six times a year. She served as vice-president two years and this is her second year as president. The association is comprised of two circles and each one meets eleven times a year. Their purpose is largely missionary and they do not have things to make money. They serve a caterer for the Donegal Historical Society which has an all-day meeting the third Thursday of June and the fed 175 people last month. Bill is a member of the Men’s Association who served about 600 people at the strawberry festival. The Women’s Association helped with this and they made 60 to 70 pies, 50 cakes, soup, sandwiches and had ice cream. The Men’s Association also has a Christmas party for the children. Phyllis, on occasion, substitutes as a Sunday School teacher and sang in the church choir before her children were bom. Bill is a trustee of the church. As far as Sunday goes Mrs. Endslow says “We keep Sunday for family day. We think there should be one day set aside to be together.’’ Sometimes they might have a picnic, even In one of their com fields. Mr. and Mrs. Endslow became life members of the Donegal Historical Society last year. This organization is 61 years old and is comprised of a group of people from all over Pennsylvania and some out of state who pay the life mem bership fee for the purpose of preserving the Donegal Church. This beautiful old historic church was built in 1719 and directly in front of it stands the Witness Tree around which the congregation pledged their allegiance to the cause of the Colonists during the American Revolution. The Donegal Springs are behind the church and often are the scene for weddings and wedding receptions. The church has constructed an education wing, the exterior being duplicate of the original building and is joined by a breezeway. The Historical Society started as a Sunday School reunion. Each year they congregate for a religious service from 11 A.M. to 12:30 the third Thursday of June. They always have a speaker, a notorious guest soloist and the church choir to sing. Mrs. Donald Betty is their choir director. William has been a member of the Penna. Fanners Association at least four years and Mrs. Endslow was an active member of the Lancaster County Farmers Association Women’s Committee for two years. She has been a member of Farm Women Society 8 for three and a half years. William, his two brothers and his father were all Masters of the Marietta Masonic Lodge, and members of the Consistory and the Shrine in Harrisburg. Mrs. Endslow enjoys working with her vegetable garden and flowers. Phyllis has a number of flower annuals as well as perennials, dogwoods and shrubs. She has geraniums planted in hanging baskets which add much to the front entrance of their house. Her husband fashioned a large high window box type place in their bedroom for her house plants and covered It with ceramic tile. This is a practical idea and the flowers are not crowded yet do not use floor space. Phyllis has several hobbies. The main one is making ceramics. Her cousin, Mrs. Walter Mowrer taught her three years ago how to make them. She made one creche set in white and is making a painted one. She has a cherry boy and girls partly done and has made vases, plates and bowls. She enjoys knitting. At present she is knitting a red, white and blue designed cardigan for Billy. She has a collection of antique dishes and a few pieces of antique furniture. She likes to read. She says she does a lot of reading between 10 P.M. and midnight when it is quiet. She enjoys cooking, especially using her time saving electronic oven. She gives us these recipes, the chicken chutney or salad being a must for their family picnics and the Montgomery pie being a tradition at the Donegal Historical Society reunion and the recipe ap pears in the Donegal Cookbook which was published in 1971. Chutney (For 4people) 2 cups diced cooked chicken 1 (1314 oz.) pineapple tidbits (1 cup) 1 cup diagonally cut celery Vz cup sliced green onion V* cup peanuts 2-3 cup real mayonnaise 2 tablespoons chopped chutney (can be purchased at some super market delicatessens) Vz teaspoon grated lime rind 2 tablespoons lime juice Vz teaspoon curry powder V< teaspoon salt Chicken Chutney (1 gallon) 8 cups diced cooked chicken 4 (13V4 oz. cans or 1 cup) pineapple tidbits 4 cups diagonally cut celery 2 sliced green onion 2 cups peanuts 2 23 cups mayonnaise 8 tablespoons chopped chutney 2 teaspoons grated lime rind 8 tablespoons lime juice 4 teaspoons curry powder 1 teaspoon salt __ Montgomery Pie (Mrs. Endslow’s variation) (Wet bottom) Lemon liquid: 1 cup sugar 1 cup molasses (King syrup) 2 tablespoons flour Add to this: 2 cups hot water Boil until clear. Add grated rind of 2 lemons Batter: 2 cups sugar Vi. cup vegetable shortening 2 eggs 3 cups cake flour 3 teaspoons baking powder 1 cup sweet milk Mix. Line four 9 inch pie plates with pastry. Spread 1 tablespoon batter over bottom to prevent pastry from getting soggy. Divide liquid among four plates. Take batter by tablespoons and drop onto liquid. Bake at 425 degrees for 15 minutes. Reduce temperature to 350 degrees for another 20 to 30 minutes. Temperature - 350 degrees. 45 to 50 minutes. Crumbs: 1 cup flour 2-3 cup brown sugar 1 tablespoon shortening Reserve 2-3 cup for topping. Liquid: V* cup Brer Rabbit molasses % cup King syrup 1 egg 1 teaspoon baking soda in 1 cup hot water Mix crumbs and syrup. Pour into unbaked pie crust. Top with crumbs.
