available. It takes her two or three days to re«d.(tt or 7 re
cords) an average size talking book, of course she does some
other things in that time also. She might read a short book in
an evening. Small wonder then that she is such a busy person
and gets so much out of life.
Joanne has a collection of about 100 sets of novelty jewelry
pins. In it there are animals, birds, musical instruments,
bugs, butterflies, leaves, shoes, boys on skiis, tennis racket,
pretzel, birthstone pins, a toreador and bull and rrtany more.
She used to have a salt shaker set collection but gave it away.
She also has a collection of bells.
Joanne has come up with some recipes of her own which
she gives here, hoping individuals living alone can use them.
She also gives some recipes of her mother’s which she
especially enjoys:
Broilerburgers
Vi hamburger bun for each serving
Enough hamburger for each hall bun
Velvetta, crumbled
Chopped onions
Parsley
Mix all into the hamburger. Broil 5 to 8 minutes.
Meal For One
1 envelope tomato cup of soup
Mix with Vz cup water.
Make 1 hamburger patty. Put about 1-3 of soup mixture in
bottom of small casserole dish. Lay raw hamburger patty in
and put the rest of soup on top.
Take another casserole dish, slice 2 carrots and put in the
dish. Put a slice of butter on top and cover with foil. Bake in
oven-broiler at 300 degrees or in a regular oven at 350 degrees
until cooked.
Cut a half and core one big apple. In hole put mixture of
butter, cinnamon and white sugar. Put in a baking dish and
put foil on top.
Can bake a potato too. Set oven-broiler at 300 degrees and
bake 1 hr. or longer as needed. Can bake in regular oven at
350 degrees.
Chicken Dinner
Use a small roast pan or cake tin. Butter it, lay a chicken

leg in, 2 large carrots and 1 large potato. Butter carrots and
chicken. Cover with foil. Can remove foil 15 minutes before
the meal is cooked. Bake in a 300 to 325 degree oven broiler
for 1 hour or 1 hour and 45 minutes in a regular oven. It takes
extra time for frozen chicken. Can use frozen peas or green
beans. The meal can be put in a casserole or foil pan. Cover
with foil while cooking.
Beef Dinner
6 or 8 ounce steak
1 envelope of mushroom cup of soup
% cup water
Put steak in a pan, sprinkle soup on top and add water. Put
foil on top. Vegetables may be put in pan too and seasonings
if needed.
Bake 1 hour to 1 hour 20 minutes at 300 degrees in oven
broiler.
Turbot or other flat fish
Butter
Salt or tomato soup.
Bake in covered casserole or pan. A potato or other
vegetables could be cooked in another covered casserole.
Bake at 300 degrees in oven-broiler or 350 degrees in larger
oven.
Corn Pie
6 ears corn or 2 cans whole kernel corn, drained
3 or 4 hard boiled eggs
3 potatoes
Parsley, salt, pepper
Dice potatoes and cook till they come to a good boil, drain.
Dice eggs, sprinkle sugar on corn if you like. Can add whole
oysters. Mix all together and put in unbaked pie crust. Put
crust or lattice on top. Bake at 425 degrees 10 minutes, turn to
350 degrees. It takes 30 to 45 minutes.
2Vz cups cake flour
1% cups sugar
3Vfe teaspoons baking powder
1 teaspoon salt
Vz cud shortening
3 A cup milk
V* cup maraschino cherry juice
1 teaspoon vanilla
2 teaspoons almond extract
4 egg whites unbeaten
18 maraschino cherries, well drained and finely chopped
Vz cup walnuts, very finely chopped
Sift dry ingredients into mixing bowl. Drop in shortening.
Combine milk and cherry juice. Add % cup of this liquid. Add
flavoring extracts. Beat 200 strokes, or 2 minutes at low
speed with mixer. Scrape bowl and spoon, add remaining
liquid and egg whites and beat 2 minutes longer. Add cherries
and nuts and blend. Bake in two deep 9 inch greased layer
pans in moderate oven (375 degrees) 20 to 25 minutes. Cool.
Can be cut in heart shape, using paper pattern.
Pink Valentine Frosting
2 tablespoons vegetable shortening
2 tablespoons butter
1 teaspoon vanilla
Vz teaspoon almond extract
Ms teaspoon salt
4 cups confectioners sugar
9 tablespoons scalded cream
Red Food coloring
Combine shortening, butter, vanilla, almond extract and
salt. Blend. Beat m 1 cup sugar. Add hot cream alternately
with remaining sugar, blending well after each addition.
Add only enough cream to spread nicely. Add few drops or
enough red food coloring to make a nice pink color.

8 ounces noodles
2 cups chicken cooked and cut in pieces
V* cup chopped celery
Little onion chopped
1 small can mushrooms and liquid
1 can cream of chicken soup
1 cup chicken broth
Boil noodles, drain. Mix all ingredients and put in buttered
casserole. Top with bread crumbs sauteed in butter. Bake at
350 degrees 30 minutes.
