the sheep but usually helps every day. She helps when an ewe
has difficulty lambing and helps feed. She goes out and
checks the ewes if BUI is away.
She also supports him in all his church and pastoral duties.
She teaches a teenager’s Sunday School class and works
mostly with the young people. She has the young people of
their church for spaghetti suppers at their home several
times a year.
Peggy, like most farmers’ wives, takes care of the lawn.
They raise potatoes and sweet corn for their own use and she
freezes some of die com. They have their own grapes so she
makes grape, cherry and other jellies. She also paints the
inside of their house. She sews some for herself and Kathy
and makes curtains and draperies for their home.
Hie Longeneckers enjoy traveling and usually combine
their sight-seeing with attending their denomination’s annual
conference. Rev. and Mrs. Longenecker went twice to Long
Beach, Calif. One time they drove to a conference at the
University of Oregon, and took her parents along. They also
saw many places enroute. They went to Florida a few years
ago, and have also been to New England. Last year Rev.
Longenecker broke his heel and couldn’t go to California so
Mrs. Longenecker and Tommy attended the conference.
Peggy reads a lot. She says “I read anything I can get my
hands on and Tom does too. Bill has quite a library and
religious periodicals and I read them.”
Peggy and Bill are very hospitable to any guests coming
into their home and love to share their facilities, not only to
church groups, but also hosting their family reunions.
She has a few short cuts to help her prepare for company
ahead of time thus saving the last minute rush in preparing
food for a lot of people. She gives us her recipe for a biscuit
mix which can be used for pancakes and dumplings and a hot
chocolate mix. Another do-ahead recipe is a frozen salad,
also a delicious, yet easy to make fruit dessert. As we might
expect she also gives a recipe for lamb.
Biscuit Mix
(For pancakes, biscuits and dumplings)
Sift together:
9 cups flour
1-3 cup double action baking powder
1 cup plus 2 tablespoons non-fat dry milk
4 teaspoons salt
Cut in 1% cups vegetable shortening.
BISCUITS: One-half cup water to 2 cups mix.
Bake 10 minutes at 425 degrees.
DUMPLINGS: 2-3 cup water to 2 cups mix.
Drop in boiling broth. Cover and cook 12 minutes.

PANCAKES * WAFFLES: Add:
1 teaspoon sugar {
1 slightly beaten egg, stirred into 1 cup water.
To 2 cups mix
Store mix in tightly covered plastic tub or glass Jar.
Hot Chocolate Mix
1 pound powdered milk (8 quart box dry milk)
1 large (2 pound) box instant cocoa mix
6 ounce Jar non-dairy creamer
2-3 cup powdered sugar (10X)
Mix together one-quarter cup mix to 1 cup boiling water.
Store mix in tightly covered plastic tub or glass Jar.
Combine and cream:
2 3 - ounce packages cream cheese
2 tablespoons lemon juice
1-3 cup salad dressing
1 teaspoon salt
Add:
IM> cups diced or crushed pineapple
1 pint fresh or frozen strawberries (drained)
¥4 cup chopped nuts
2 cups miniature marshmallows
Fold in:
1 package whipped topping mix or Dream Whip
Pour into mold and freeze.
Fruit Dessert
(12 servings)
Stir together:
1 can crushed pineapple, don’t drain
3 oranges, chopped f ne
3 bananas, chopped fine (pour juice of 3 lemons over bananas
to keep from turning brown)
VA cups sugar.
Dissolve 2 envelopes unflavored gelatin in 1 pint cold
water. Pour 1% cups hot water into the cold gelatin, then
pour total liquid over fruit and let stand. Stir while thickening
to prevent bananas from staying on top.
Mix in large bowl. Makes 2 Vz quart of fruit. Fruit cocktail
or other fruit could be substituted for oranges and bananas.

8 lamb shanks
% cup flour
1 teaspoon salt

Vi cup salad oil
Vz cup brown sugar
2 teaspoons dry mustard
% teaspoon salt
Vi teaspoon pepper
1 cup ketchup
2 tablespoons vinegar
1 (1 pound) can tomatoes
Roll lamb shanks in flour and salt mixture and brown
several at a time in large pan. Pour off all fat. Meanwhile
combine brown sugar, dry mustard, salt and pepper. Stir in
ketchup and vinegar. Pour over lamb shank in Dutch Oven.
Then pour tomatoes over. Cover and bake in moderate oven
(350 degrees) 1% to 2 hours, until meat is tender, or simmer
on range top. 8 Servings.
