They've found that properly designed utensils, correct cooking tempera tures, and better use of ovens can help save the budget as well as fuel. For example, the size and shape of a baking pan affects the volume and texture. For a delicate browning of cakes, cookies and muffins, a light weight aluminum pan with a shiny interior and slightly dulled bottom is recommend ed. But the anodized alumi num pans that have a dull finish are best for pies since they transfer heat quickly and produce a crisp flaky pastry. A good demonstration of the way aluminum conducts heat quickly is to drive an aluminum spike or nail into a baking potato. You’ll cut the baking time in about half. (The spikes are available in most stores that carry kitch en equipment.)
