Sauce them, bread them, make
them exciting so that every
one will join in the praises.
Baked Eggplant: Mix Vz cup
fine dry bread crumbs and
V* cup grated Parmesan cheese.
Slice 1 medium eggplant into
Vz inch slices. Spread both
sides of eggplant with Vi cup
real mayonnaise. Coat with
crumb mixture. Bake in 425°F.
oven, turning once, 15 min
utes or until browned and
tender. Serves 4 to 6.
Broccoli with Easy Hollan
daise: In a saucepan gradually
stir 1/3 cup milk into 3/4 cup
real mayonnaise. Add dash of
salt and pepper. Cook over
low heat. Add 2 tablespoons
lemon juice and a pinch of
lemon rind. Serve over cooked
and drained broccoli. Serves 4.
Grilled Tomatoes: Cut three
tomatoes in half crosswise.
Sprinkle' with salt and pepper.
Stir together 1/3 cup real
mayonnaise and 1 teaspoon
grated onion; spread on cut
sides of tomatoes. Broil about
5 inches from heat until gold
en brown, about 5 minutes.
Serves 6.

Next Year

trients in foods the U S RDA
In the past, the MDR, or Mini
mum Daily Requirements, has
been used to indicate the mini
mum amounts of nutrients need
ed to prevent nutritional defi
ciencies
The Federal Food and Drug
Administration (FDA) has ap
proved the system for labeling
food products, such as cereals,
dietary supplements and foods
with medicinal claims. The word
“minimum,” however, confused
many persons who multiplied
minimum daily allowances to
make sure they were properly
nourished.
Now the FDA is taking a more
positive approach. The new sys
tem, the US. RDA, or U.S. Re
commended Dietary Allowances,
is more than just minimum. It in
cludes a safety margin to allow
for differences in individual nu
trition needs.
Nutritional labeling is volun
tary, but if a company decides to
use such labeling, it must follow
the new regulations. Since it
takes time to use up old labels,
companies will have until De
cember 31, 1974, before the law
takes full effect.
