The trick is to pro ceed slowly, bone up on re modeling, choose a contractor carefully, insist on quality, and check all work as it pro gresses. Then you’re more apt to be house-proud when the work is finished. Actually there are many good reasons for remodeling an older house. It often has sturdy basic construction on which to modernize, and the value of the property will be enhanced. It’s also less ex pensive to build an addition or make improvements than to build a new house. And you can stay in your own familiar neighborhood with out disrupting the entire family. Of course, there’ll be mo ments when you wished you hadn’t tackled the project. About the time the plumber drives' over your new young shrubs, the family has eaten out three days in a row, the cat has disappeared, and the aspirin-is buried boxes-deep in the garage, you’ll be ready to call it quits. But if your house is basi cally sound and you have the help of a good contractor, remodeling can be well worth the effort. A contractor is really essential unless you are more knowledgeable about building than most home owners. He can help you avoid costly mistages and save you money in the long run. For example, patching’ a leaky roof rarely saves money since roofs wear out all over. One leak generally means more to come. Selecting the right kind of roofing is an other important factor if you are to have the long-lasting protection you want for your home. Lime St., Quarryville 786-2895 HAM CHICKEN BAKE • Cook Wi cups each, chopped onion and celery in 3 A cup butter until tender. • Blend in 3 A cup of flour, then stir in 4Vz cups chicken broth and light cream or milk. • Cook and stir until sauce comes to a boil. • Add 6 cups each ■ cooked, diced ham and chicken and 2 cups sliced mushrooms. • Season with 1 teaspoon poultry seasoning I teaspoon salt I teaspoon pepper • Place in large casserole and bake in 350° F. oven until hot. • Top with biscuits and bake until biscuits are done. Serve with fresh relishes and Shortcake dessert. A ready crowd pleaser. Yield: 24 servings. MARINATED TOMATOES 8 whole medium-sized tomatoes '/2 cup olive oil or salad oil 2 tablespoons fresh lemon juice 2 tablespoons wine vinegar 2 tablespoons thinly sliced green onions 1 tablespoon finely chopped fresh parsley 1 teaspoon dill weed V 2 teaspoon salt Freshly ground pepper Bibb lettuce Blanch tomatoes in boiling water for 30 seconds. Slip off skins. Place tomatoes in a shallow dish. Combine oil, lemon juice, vinegar, onions, parsley and seasonings. Pour over tomatoes. Cover. Place in refrigerator over night or for several hours to chill thoroughly. Serve individual tomatoes on Bibb lettuce surrounding Chilled Macaroni Salad.
