Two decades ago the food fat
market was split about equally
between animal fats (laid, but

edible vegetable oils By 1972,
however, elible oils had captuied
75 percent of the 11%-billion
pound market for food fats.
On a per capita basis, edible
vegetable oil usage doubled since
the early 1950’s—fiom 22 to 41
pounds—wheieas animal fat con
sumption shrank fiom 22 to 13
pounds.
