The home canning of fruits and
vegetables has taken on new
popularity in the past several
years. It is one of the economies
some families use to cut down
food costs. Some homemakers
find a great deal of satisfaction in
having home canned products
ready to use during the winter
months. Others are interested in
having a safe food supply. But,
how many of these home canners
really know and understand the
basic principles of food preser
vation and the methods
necessary to insure the safety of
the food?
