All cows are from herd enrolled in the Dairy Herd Improvement Registry (DHIR) official testing program. Cows recognised for their ability and their owners are: Hiram S. Elam Bollinger, Manheim Meat Consumption Continues Up in 71 Per capita consumption of pork in 1971 reached the highest level since 1944, Clifton 'B. Cox, ' chairman of the Board of Directors of the American Meat Insititue reported recenlty. On the average, each person in the United States ate 73 pounds of pork last year, an increase of nearly seven pounds over 1970. These spectacular increases in pork boosted total red meat consumption in 1971 to a record of 192 pounds per person, said Cox, who is president of Armour Food Company in Phoenix, Ariz. He predicted that total meat production and consumption will reach new highs in 1972. In addition to pork, American consumers, on the average, last year ate nearly 113 pounds of beef, down somewhat from 1970; about three pounds of veal and slightly more than three pounds of lamb, Cox reported.
