'Favorite Recipes'Column Features Picnic Salads
As the hot and lazy part of
summer approaches, your family
may want to take advantage of
the weather with an occasional
picnic.
Picnics can be enjoyed by
everyone, both children and
adults
No picnic is complete without
a delicious salad.
Our readers have forwarded
several of their favorite recipes
for consideration during your
next picnic.
But before we present these
recipes, we want to remind that
our next “Favorite Recipes”
column will be July 24 For
this column, we will feature out
door meat recipes.
This is also the time of year
for cooking outdoors This can
be a good family past time either
at home or away on a picnic
outing

Back to the subject of salads,
Mrs. Isaac B. Good, Stevens RD
1. sends her original reape
which she calls "Delicious Potato
Salad” as follows:
Delicious Potato Salad
Salad:
4 cups cooked diced potatoes
2 Vt cups chopped celery
% cup shredded carrots
Va cup chopped onion
2 tablespoons chopped parsley
6 hard cooked eggs, diced or
mashed.
Dressing
1 cup plus 1 tablespoon Mir
acle Whip
% cups sugar
% cup vinegar
V& teaspoon salt
Va teaspoon pepper
Vi teaspoon paprika
Va teaspoon celery salt.
Combine first six ingredients
after the potatoes and eggs are
thoroughly cooled.
Prepare dressing by combining
Miracle Whip and sugar; add
vinegar and remaining season
ings and stir until well blended.
Combine dressing with first six
ingredients and chill.
Serves 10 to 12.
Note: 4 cups cooked and drain-

Mrs. J. N. Shirk, Leola RDI,
has a delicious potato salad re
cipe “for those who don’t like
mayonnaise” as follows:
2 quarts cooked, diced pota-
toes
Vt onion
5 hard cooked eggs
2 tablespoons finely chopped
celery
Salt and pepper to suit taste.
Dressing:
Beat all following ingredients
together and put in double
boiler, stirring till thick. Then
cool and add to potato mixture:
1 cup vinegar
4 teaspoons cornstarch
4 teaspoons butter
2 cups sugar
4 eggs
Cream may be added before
serving
Mrs. Ira H. Davis, Quarryville
RDI, forwards her easy-to-make
“Quick Picnic Salad” as follows:
Quick Picnic Salad
Use number two can sliced or
chunky pine applej well drained).
Add one can of cherry pie mix
or make your own while cherries
are in. Add Vk cups small
marshmallows and two sliced
bananas.
Combine all.' The pie mix
makes the dressing.
Especially good with a ham
dinner.

“Kidney Bean Salad” as follows:
Kidney Bean Salad
1 can Kidney Beans
Onion and mayonnaise to taste.
Drain juice from beans and
spray with water until beans are
free from all juice.
Then mix onion and mayon

Recently our column featured
cherries. Mrs Eyman combines
cherries and salads in the follow
ing easy Cherry Salad recipe:
Cherry Salad
1 pint sweet cherries, drained
1 small can crushed pineapple,
drained
1 pack Strawberry jello
Make jello as directed using
juices from cherries and pine
apple. Mix all together.
Thelma L. Pannebecker, Rein
holds RDI, has a Hawaiian Salat!
which she notes as “A favorite
of my family to take to a picnic’’;
Hawaiian Salad
2 small packages orange jello
2 cups hot water
1 can frozen orange juice
When this is almost set, whip
until fluffy. Add 1 cup of whip
ping cream that has been whip
ped or one package of Dream
Whip or Ready Whip mixed as
per directions on package.
Add:
1 tablespoon salad dressing
1 cup miniature marshmallows
1 cup pineapple ((crushed or
tidbits), drained
1 small can Mandarin orange
sections, cut in half, drained
Drain juice from the oranges
