The scientists will also examine the effects of freezing and cooking each product, the degree of bacterial fermentation, and the product’s compatibility with other foods. During the 15 month ‘erm of the contract, the researchers plan to test approximately 100 imitation milks and their mixes Samples will be obtained from dairy cases in grocery stores as well as from manufacturers. Dr. Frank V. Kosikowski, pro fessor of food science at the Uni versity, will direct the research. The Department will be repre sented by Dr. William A.
