Cows With Cool Heads
Have More Production

In this day of college sit-ins,
campus rebellions, gang lumbles
and lacial umcst it’s pleasant
news to learn that a scientist is
woiking on methods to keep
heads cool
The cool heads in this partic
ular instance aie those on cows
being studied by the U S Depart
ment of Agriculture.
The agricultural engineer con
ducting the studies, which aie
being made in cooperation with
the University of Missouri, has
found that cool-headed cows give
moie milk
In the tests, cows gave 15 to
20 percent more milk when then
necks and heads weie held in
enclosures cooled to 60 degrees
Fahienheit than when they weie
housed in an 85-degree barn
“Why not air condition milk
barns’” is the logical question
to ask in this era when we have
air-conditioned restaurants, air
conditioned churches, air-condi-
tioned homes and even au-condi
tioned automobiles
The answer to that is simple
The installation, operating and
maintenance costs would be so
high that air-conditioned bains
would not be practical.

In the Missouu Climatic Lab
oratory at Columbia, Mo the

tion levels of 10 Holstein cows
put in a 100 m cooled to 65 de

He then put the cows’ heads

within the enclosures could be
varied from that of the room
temperature which was 85 de
grees
He made these observations

the scientist who pei formed the
tests became interested in a
head and neck cooling piocedure
after learning that "zone" or
“snout” cooling had increased
hog pioduction
The moial of this column is
that it pays to keep a cool head.
Evaporated Milk
Origin Traced To
Napoleonic Era
Because “an army travels on
its stomach,” Napoleon offered
a prize of 12,000 francs in 1795
to anyone who could find a
satisfactory method of preserv
ing food
It was 15 years before an ob
scure Paris confectioner named
Nicholas Appert was awarded
the prize. He had discovered
that he could keep foods for
long periods by cooking them,
sealing them air-tight and then
cooking them once again
Appert’s evaporated milk was
a far cry from today’s but he
had demonstrated the practica
lity of concentrated milk
Swiss-born dairymen m Illi
nois perfected the machinery
and techniques for processing
evaporated milk as we know it.
Today it’s pasteurized, concen
trated, homogenized, fortified
with vitamin D, sealed in cans
and heat-sterilized to keep with
out refrigeration
Cooks find it a handy shelf
item. Napoleon would have lov
ed it.
