1 can (1 pound) salmon
1 package (3 ounce) lemon
flavored gelatin
1 cup boiling water

Drain salmon and flake. Dis
solve gelatin in boiling water
Add cold water, salad diessing,
vinegar, salt, and pepper Beat
until smooth Chill until slightly
thickened Whip until fluffy
Fold in celery, parsley, onion,
and salmon Pom into a 1-quart
mold Chill until firm. Unmold
on salad greens 6 servings

SALMON CAKES
4 tablespoons butter
1 medium onion, chopped
1 can (1 pound) salmon
1 teaspoon salt
1 teaspoon dry mustard
4 tablespoons chopped
parsley
4 eggs, lightly beaten
4 cups fine fresh bread
crumbs (8 slices)

mon, flaked
Combine flour, baking powder,
sail and sugar in mixing bowl
With a pastry blender or fork
tines, cut in the shortening until
it is broken into fine particles
Mix milk and egg, add to short
ening-flour mixture and stir
gently until dry ingredients are
moistened to make a lumpy
batter Fold in the flaked sal
mon Fill greased muffin cups
