USDA Issues Pamphlet On Beef Yield Grades A new pamphlet discussing the U.S. Department of Agricul ture’s beef yield grades has been published by the agency’s Consumer and Marketing Ser vice. This publication, entitled "Yield Grades For Beef” (MB 45), illustrates and tells in de tail how these grades are deter mined and what they mean to producers, packers, retailers and consumers. The pamphlet emphasizes how yield grades benefit retail ers by providing them with a readily available means of buy ing beef with complete assur ance as to its yield of retail cuts. USDA’s Carcass Evaluation Service, the publication states, is available to producers who wish to use it as a means of gett ing precise carcass information about thin cattle.
