is in contrast, of course, to some tobacco fields
that were only planted this week. Generally,
tobacco farmers want to have the crop planted
by the 4th of July, but unfavorable weather
held up many farm chores for two to three
weeks.

All-Dairy, Low-Fat Products
AroUse Interest Of Dairymen
Several “all-dairy,” low-fat,
food products are attracting at
tention of dairymen and daily
food,processors.
Minnesota University’s de
partment of food science and in
dustries is currently testing a
low-fat dairy topping which con
tains about 15 percent milkfat
compared to 30-35 percent for
whipping cream. It is reported
ly more stable than whipped
cream and can be stored frozen
for several months.
Agricultural experiment sta
tion scientists at South Dakota
State University have developed
a new low-fat, all-dairy table
spread. Processing and ingredi
ent details have been made
available to manufacturers in all
states.
Spreads with low milkfat con
tent are permitted in Wisconsin,
South Dakota, and Ohio. These
states have changed their laws
to permit the manufacture and
sale of table spreads containing
less than 80 percent milkfat, and
many dairymen are showing in
terest in these items as outlets
for more dairy ingredients.
