Minnesota University’s de partment of food science and in dustries is currently testing a low-fat dairy topping which con tains about 15 percent milkfat compared to 30-35 percent for whipping cream. It is reported ly more stable than whipped cream and can be stored frozen for several months. Agricultural experiment sta tion scientists at South Dakota State University have developed a new low-fat, all-dairy table spread. Processing and ingredi ent details have been made available to manufacturers in all states. Spreads with low milkfat con tent are permitted in Wisconsin, South Dakota, and Ohio.
