Prize-Winning Cakes
Anyone who admits to being a cook takes
great pride in turning out a beautiful-looking,
delicious-tasting cake. One need never want
for a cake recipe; they can be found in maga
zines, newspapers, food package wrappers,
greeting cards just about anywhere. In fact
some companies send recipe fivers along with
their monthly statements. So keep your eyes
open you might be missing a treat.
An ideal example of a prize-winning cake
is Peppermint Topped Fudge Cake. Made with
buttermilk and cocoa, it’s a perfect chocolate
cake made by the conventional method. The
Peppermint Fluff Frosting uses the egg white
leftover from the batter recipe.

cup sifted enriched flour
cup sugar
cup firmly packed light
brown sugar
Vi teaspoon baking soda
*i teaspoon salt
H cup cocoa
Vi cup shortening
% cup buttermilk
1 egg yolk
1 teaspoon vanilla extract

Peppermint Fluff Frosting*
Sift together all dry ingredi
ents. Blend in shortening and
buttermilk at low speed with
electric mixer. Then beat two
minutes at medium speed. Blend
in egg yolk and vanilla. Beat for
additional two minutes at medi
um speed. Pour into a greased,
waxpaper-lined 8-inch square

14 teaspoon vanilla extract
2 tablespoons light corn syrup
2 tablespoons crushed pepper
mint candy
Pink or green food coloring,
optional
Beat egg white until soft peaks
form. Gradually add sugar; beat
until dissolved and frosting
stands m peaks. Add vanilla and
corn syrup; beat until frosting

Coconut Mixture:
1 egg white
1 tablespoon water ■
1 teaspoon vanilla
M cup sugar
1 7-ounce package ({ cups)
packaged, grated coconut
1 tablespoon dour
K teaspoon salt
Combine egg white, water and
vanilla; beat till foamy. Add
sugar gradually and continue
beating until stiff, glossy peaks
form. Fold in coconut, flour and
salt and set aside.
Cake Mixture:
1 cup chocolate morsels
(semi-sweet)
H cup water
1 teaspoon instant coffee
2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cap sugar
94 cap sour cream
H cap shortening
2 eggs
1 egg yolk
1 teaspoon vanilla
teaspoon salt
