Dutch cooking will recognize
this as a recipe for ponhaus that
calls for the addition of corn
meal to meat and water ‘until
the mixture is the consistency
of mush’.
“The report points out that
eight plants under the state’s
voluntary meat inspection law
were visited, and that condi
tions at six were found to be
‘generally satisfactory’. There
are 53 plants operating in the
state under this plan.
“Animals are not inspected
individually for diseases, the re
port claimed, and ‘therefore, the
public is not protected from the
possibility of eating diseased
meat’.
“I want to point out that
Pennsylvania’s animal health
programs from farm to meat
counter are thorough and
efficient.

“We have worked hard for
more than 30 years to wipe out
tuberculosis and brucellosis in
dairy and beef herds. Today,
the incidence of these diseases
is less than one-tenth of one
percent. This is important to
meat production since dairy ani
mals, once they are no longer
useful for milk production, are
usually sold for making bolog
na, frankfurters and similar
products.
“But all animals sold for
slaughter at auctions and sales
in Pennsylvania must be exa
mined by veterinarians. Last
year, 269 animals were con
demned as unfit for human con
sumption. In this manner, Penn
sylvania eliminates many po
tential trouble sources before
animals reach slaughter plants,”
the secretary notes.
“Last year, 530,000 animals
were slaughtered in plants
operating under the Pennsyl
vania inspection program. Of
this number, 539 animals were
condemned.”
