1 package lemon-flavored
gelatin
t cup boiling water
VA teaspoons grated lemon
rind
2 tatfleepoons lemon juice
Dash of salt
2 cups applesauce
I’ cup diced celery
% cup diced pimiento
4 cups cottage cheese
Dissolve gelatin in boiling
water; stir in lemon rind, lem
on juice and salt. Add apple
sauce, celery and pimiento;
mix well. Pour into mold,
which has been rinsed with
cold water. Chill until set.
Serve with cottage cheese. 6
to 8 servings.
