Turkey Is Kind To Food Budget No longer do you need to think of tur key as the traditional whole roasted bird that conies to the table. You can try turkey rolls, patties, drumsticks, thighs, or wings. For the small family, roasting cutup pieces of turkey is ideal. They leave more space in the oven so the vegetables and desserts can make a complete oven meal. With pieces, it’s easy to prepare just what you need for the family with no leftovers unless you plan for them. If you can’t find turkey pieces, ask the man at the poultry counter to halve or quar ter the turkey. This gets the amount down to family size. Roast the piece as you would a whole turkey. Put in a flat, open pan on a rack and roast at 3’50 degrees allowing 20 to 25 minutes per pound. If using a meat thermometer, insert it on the side of the thigh next to the bird and roast the turkey until the thermometer reads 185 de grees. If you want dressing, prepare it with turkey broth and bake it in a covered pan.
