to crumb mixture. Shir in but

Spread evenly. Bake m a

grees) 12 to 15 minutes.

spreading consistency is
reached.

COCONUT FUDGE CAKE
1 tablespoon instant coffee
% cup hot water
% cup cocoa
1 egg, separated (reserve
yolk for frosting)
2’ cups sugar
2 ( Zy 2 ounce) boxes
flaked coconut (reserve
% 'cup for garnish)
2 cups sifted all-purpose
flour
3 eggs, separated
1 teaspoon baking soda
y 2 cup commercial sour
cream
y 2 cup butter or margarine,
softened
2 teaspoons vanri.Ua extract
1y 2 teaspoons salt
1 (14-ounoe) package
fudge and frosting mix
i/2 teaspoon almond extract
or more to taste
Dissolve coffee in water.
Add cocoa; stir to dissolve.
Beat 1 eee white until soft
peaks form. Gradually add V*
cup sugar, beating until stiff
peaks form. Fold in coconut
and 1 tablespoon flour. Beat
3 egg whites until soft peaks
form. Gradually add % cup
sugar, beating until stiff
peaks form. Add soda to sour
creaim. Beat 3 egg yolk®, but
ter or margarine, vaniliia,
salt and remaining sugar
with half of cocoa mixture
until light and creamy, about
4 minutes at medium high
speed. (Mixture will curdle.)
Add sour cream, remaining
flavor and remaining cocoa
mixture. Blend well. Fold an.
beaten egg whites. Turn V<
of chocolate batter into a 10-
inich tube pan, greased on
bottom. Place % of coconut
mixture on top. Cover with
% Of remaining chocolate
batter. Top" with remaining
coconut mixture and then
