Form into 16 small balls. Combine sugar and nutmeg. Roll puffs in melted butter and sugar mixture. Set aside. Combine apple sauce, sugar, orange rind and juice Stir in tapioca Pour into 9-mch pie -plate. Place nutmeg puffs around edge of plate and m center. Bake in hot oven, 400 degrees, 25 to 30 minutes or until puffs are brown. Serve warm or cold with or without light cream. Makes 6-8 serv ings.
