Combine rice, milk and
shortening in a saucepan.
Bring to a boil; cool. (This
may. be done ahead of time
if desired)
Sift together flour, sugar,
baking powder, salt, baking
soda, and cinnamon. Beat egg
yolks slightly. Add to cooled
rice mixture with sifted dry
ingredients; stir until blend
ed. Beat egg whites until
stiff but not dry. Fold into
batter together with grated
apple.
Drop by tab.espoonsfuls
onto hot, lightly greased
griddle. Cook until golden
brown, turning only once.
Serve with butter, cinnamon,
sugar or syrup. Makes 16 to
18 3Vt>-mch griddle cakes
