Parks, graduate assistant in dairy science at Penn State, said 14 of these carbonyl -compounds • have been identified in laboratory tests Parks spoke at the an nual meeting of the Ameri can Dairy Science Associa tion at the University of Ill inois “Various methods of sepa rating carbonyl-type _ com pounds from each other are being investigated at Penn State," Parks stated. “Most of the stale flavor compon ents found in dry whole milk tested in our laboratory been removed by distilling under vacuum,” he added The ‘ Penn State experi menter indicated that “flavor' threshold values” would be needed for each individual, carbanyl before drawing conclusions as to the signifi cance of carbonyls in the stale flavor of dry whole milk. He stressed th& need for more data on identified carbonyls.
