The scientists believe dis
covery of the substance may
lead to a solution of the
storage gel’ing problem be
cause of the way it reacts
to calcium salts. Most of file
milk proteins already iden
tified and studied can be pre
c pitated with calcium salts,
while alpha (z) - casein can
not. Thus, this may be an
important factor in stabilizi
ng the calcium-casein com
plex of milk.
