Although yon may not observe Lent at your house, there is no better time than now to take advantage of some of the seafood specials stores are offer ing during this season. It is also a good time to give some new receipes a try. Take this Salmon Crunch Casserole for instance. Salmon and celery soup are the featured ingredi ents. A topping of crunchy cashew nuts .glamorizes this easy-to-fix dish. Salmon Crunch Casserole 8 ounces medium noodles 1% cups condensed cream of celery soup (10% ounce can) 1 cup milk k -2 cups coarsely flaked sal mon (1 pound can) Vi cup minced onion Vi cup chopped pimiento stuffed olives Vi cup chopped salted cas hew nuts Add four teaspoons salt and noodles to 1% quarts of boiling water. Boil rapidly, minutes Cover, remove from heat and let stand 10 minu tes. Meanwhile gradually add milk to soup. Simmer about 10 minutes. Mix salmon, onion and oli ves. Rinse noodles with wa rm water and drain well. Pour soup over noodles and mix gently. ' - Place % of noodle mix ture in well-greased 2-quart casserole. Cover with half of the salmon mixture. PENNA. m m Sweet Sour Fish Noodles .1-pound package frozen fish fillets 1 tablespoon granulated sugar % cup brown sugar 3 tablespoons cornstarch 1 teaspoon salt % cup vinegar 1 cup water 8 ounces broad noodles % cup butter or margar ine 1 green pepper, cut-in strips 2 cups cooked tomatoes (1-pound can) Thaw fish fillets according to package directions. Rinse fillets and cut into bite-size pieces. Combine sugar, bro wn sugar, cornstarch and satl insaucepah. Add vinegar and water and cook until mixture thickens, storing constantly. Add four teaspoons salt and noodles to V/z quarts boiling water. Boil rapidly stirring con stantly, for two minutes. Cover, remove from heat and let stand 10 minutes. Mean while, melt butter or marga rine in large skillet or Dutch oven. Add green pepper and cook three or four minutes, stirring occas’onally. Add to matoes and fish. Cover and let simmer ab out five minutes. Add thick ened sauce, cover and cook mixture five to 10 minutes longer, storing occasionally. Rinse noodles with warm water and drain well. Add noodles to fish mix ture thoroughly. Serve im mediately. Four servings. A baked fish stuffed with celery-almon stuffing has mouth-watering goodness to every tasty bite.
