CHINESE OMELET
cup uncooked rice
4 tablespoons butter or mar
garine
4 tablespoons enriched flour
2 cups milk
3 eggs separated
}/ 4 teaspoon paprika
1 'j teaspoons salt
1 a teaspoon dry mustard
4 tablespoons grated cheese
Cook nee until tender. Rinse
with hot and cold water. Make

flour and milk Cook until thick
ened Beat egg yolks Add rice,
sauce, seasonings and' cheese
Fold in stiffly beaten egg whites
Pour into a greased shallow pan
Bake at 350 degrees for 35 minu
tes. Serves 6

Combine all ingredients, adding
salt and pepper as needed Mix

MEAT-POTATOBUUGERS
14 pound chopped raw beef
Vi cup chopped or coarsely
grated raw potato
14 cup chopped or grated onion
2 tablespoons chopped gieen
pepper
1 teaspoon salt
1 egg
Drippings or other fat or oil
1 cup tomato juice or puree
1 tablespoon flour
Mix all ingredients except fat,
tomato juice, and flour. Form into
4 or 5 flat cakes.
Brown the cakes on both sides
in fat or oil in a fry pan. Add
tomato juice, coveij and simmer
slowly until done, about 25 minu
