Stie beling, director of USDA’s newly formed Institute of Home Econo mics, said the average Ameri can’s diet has improved in many respects since the beginning of the century. We eat fewer calories per per son—3,22o per day as compared to 3,490 m the early 1900’s— hut increased consumption of milk, meat, poultry, fish, eggs, dark green and yellow vege tables, and citrus fruit provides us with more of many elements essential to good nutrition.
